Chinese restaurant chains are increasingly integrating artificial intelligence into their operations, transforming various aspects from back-of-house management to customer-facing services. Yum China, the largest restaurant operator in China and parent company of KFC and Pizza Hut, is a prime example, aiming to automate most back-of-house tasks within five years. Their internal 'Super Brain' platform utilizes AI for sales forecasting, inventory management, and labor scheduling, helping general managers make data-driven decisions and identify cost-saving opportunities. Additionally, Yum China is deploying AI and robotics in logistics, using robots in frozen warehouses to automatically retrieve products, thereby improving efficiency and reducing labor needs.

Beyond large chains, AI tools are also empowering smaller operators. Meituan, a Chinese on-demand food-delivery giant, has developed the LongCat AI model and an AI-powered decision-making tool called Kangaroo Advisor. This free tool helps restaurant operators with market analysis, site selection, menu development, and financial assessment. For instance, a breakfast shop owner used it to quickly analyze consumption patterns, delivery density, pricing, and competition to identify optimal locations and menu strategies, a process that previously took weeks of manual scouting. Over 1,000 restaurant brands have trialed this tool, generating more than 100,000 reports.

AI is also enhancing customer experience and operational efficiency in front-of-house services. Haidilao, a Chinese hotpot chain, uses AI for personalized recommendations, filtering dishes based on customer conditions like pregnancy or dietary restrictions. Consumers can use AI to book tables and receive customized dish suggestions based on preferences and past orders. Industry experts note that AI allows chains to better estimate demand, adjust staffing, forecast ingredient consumption, refine pricing, and identify high-conversion delivery zones. This shift is turning AI into a proactive decision-making 'co-operator' for restaurants, moving away from subjective judgment to data-integrated analysis.

The widespread adoption of AI is driven by China's large and growing catering market, which surpassed 5.5 trillion yuan ($774.7 billion) in 2024. Local governments are also promoting this trend; Shanghai, for example, plans to achieve over 70% full-chain intelligent penetration in group catering and fast-food enterprises by 2028. This technological integration is seen as crucial for the industry to move from scale expansion to value-driven growth, making advanced technology accessible and practical for restaurant operators.
