Chicken, once an expensive niche meat, has become the world's favorite protein, with global production accelerating in the past three to four years. According to Rabobank's global poultry specialist Nan-Dirk Mulder, he struggles to find any market where chicken consumption is falling. Worldwide chicken production surged from 48.3 billion in 2006 to 76.2 billion in 2023, reshaping farming landscapes and retail environments with more sheds, hatcheries, feed mills, and fast-food outlets.
The convenience and adaptability of chicken, served fried, roasted, grilled, or shredded across diverse cuisines from American suburbs to Chinese malls, have made it a ubiquitous food item. The industry shifted from egg-laying hens to meat-specific birds, enabled by initiatives like the post-war "Chicken of Tomorrow" contests. This, combined with improved breeding, feed conversion, and the use of antibiotics, shortened production cycles and drastically reduced prices.
While the US pioneered the industrial chicken model, it no longer dominates, with Brazil becoming the largest exporter, shipping approximately 4.9 million tonnes in 2024, up from about 910,000 tonnes in 2000. In 2022, chicken surpassed pork as the most produced meat globally. Its structural advantages, including low cost, feed efficiency, quick production, and fewer cultural or religious restrictions compared to beef or pork, continue to drive its growth.
Global production has recently accelerated to over 3% annually from the previous 2% to 2.5%, indicating no signs of "peak chicken" even in mature markets like the US. This trend is evident with companies like McDonald's, traditionally beef-centric, now emphasizing chicken. However, there's a shift towards localized supply chains, driven by food security and employment concerns, leading countries like Saudi Arabia and China to boost domestic production. Yum China, for instance, added 457 new KFC stores in Q1 2026, reaching 13,454 outlets in China.
Despite its efficiency compared to beef, the massive scale of chicken production raises environmental and political concerns, including increased emissions, waste, and pressure on feed systems. Animal rights campaigns and legal challenges, such as the 2025 High Court ruling in the UK classifying chicken manure as waste, highlight growing opposition to intensive poultry farming. This creates a contradiction between consumer demand for cheap protein and citizen concerns about environmental and ethical impacts.
