Maine's oyster industry has experienced remarkable growth, with its value surging by 78% from 2011 to 2021, reaching over $10 million. This expansion has positioned oysters as the third most valuable fishery in the state in 2024. The industry's success is partly attributed to the research by University of Maine scientists, who helped it grow from a handful of entrepreneurs to over 150 oyster-producing companies.
Technological advancements are playing a crucial role in this growth. University of Maine researchers, led by scientists Thomas Kiffney and Damian Brady, have developed an online tool utilizing satellite data from NASA's Landsat 8 and 9 and the European Sentinel-2 satellite. This tool helps oyster farmers select optimal locations by analyzing water temperature and plankton levels, predicting how quickly Eastern oysters (Crassostrea virginica) will reach market size. The tool also aids in tracking harmful algal blooms and seasonal trends, reducing financial risks for farmers.
Innovation extends to farming methods as well. Luke Saindon, founder of The World's Your Oyster Co. (TWIYO) in Wiscasset, Maine, is piloting a solar-powered floating conveyor system called 3D-COAST. This system is designed to produce up to 125,000 oysters annually from a single 8-by-25-foot raft, significantly reducing the physical labor traditionally associated with oyster farming and optimizing space in coastal waters. The project, supported by USDA funding, aims to increase production efficiency and lower operating costs.
Despite past challenges, such as the multinucleate sphere unknown (MSX) parasite outbreak in 2010 that devastated populations in the Damariscotta River, the industry has recovered. Farmers now use MSX-resistant broodstock and adhere to strict regulations, ensuring that Maine oysters remain safe for consumption. While oysters are available year-round, they are most plentiful from spring through fall, with the fall season often yielding the best taste as oysters store fat and sugar for wintering.
