Traditionally, Credem Bank has offered loans against Parmigiano Reggiano, storing up to 500,000 wheels annually, valued at approximately €325 million ($382 million). Producers typically receive 60-80% of a wheel's value upfront. The bank has successfully operated this system for over a century without a single euro lost on these loans. The introduction of blockchain has doubled Credem's potential lending capacity by allowing cheese to remain at producer-owned facilities, demonstrating how technology can enhance a centuries-old financial model in the $4.7 billion Parmigiano Reggiano industry.
The Parmigiano Reggiano Consortium, which oversees the production of around 4 million wheels annually, ensures strict quality controls and fights counterfeiting. The cheese, made only from milk, salt, and rennet, must age for at least 12 months, with many wheels maturing for 24, 36, or even 40 months. Each wheel undergoes a rigorous inspection and is fire-branded with a seal after passing a tapping test for internal defects. The industry faces challenges such as a 10% drop in volumes sold in Italy in 2025 due to higher consumer prices and volatile export markets, particularly the US, which saw a 25% tariff burden and rising shipping costs. Despite these challenges, exports exceeded 50.5% of total sales for the first time in 2025, highlighting the global demand.
